Dornoch Distillery was founded by Simon and Philip Thompson in 2016 when they launched their first crowdfunding campaign. They reached their target within the first two weeks which saw over 200 whisky enthusiasts invest in their dream to start a brand new distillery that focuses on older styles of whisky.
A remarkably successful 2017 saw the team lay down casks of future single malt whisky and launch Thompson Brother’s Organic Highland Gin and create an independent bottling franchise, available in 11 international markets. We released our first whisky in 2020 and have since released further casks of whisky up to 5 years old (up to the end of 2022). Being one of the smallest whisky-producing distilleries in Scotland means that we are a small business with a very small team of staff, therefore we are currently unable to offer distillery tours. We have a shop located in Dornoch, directions and opening hours can be found on our website.
Dornoch Distillery is committed to long-term sustainability. The current distillery switched from direct gas-fired stills to direct electric on a renewable tariff as well as a number of upgrades to improve energy and water efficiency. The majority of Dornoch Distillery’s production has been organic certified and in-house bonded transport and deliveries are done with a fully electric van. Our co-products (draff and pot ale) are fully utilised by local farmers and crofters. Planning has been submitted for a larger distillery on barren land to the south of Dornoch, we hope to begin construction during 2023.
